Simple Chocolate Mousse/Chocolate Sauce

This recipe has been floating around social media for a while and it really is good! Simple, tasty and high in protein. I’ve discovered it’s also really easy to make into a chocolate sauce to pour on delicious things like pancakes and ice cream…

Chocolate and Coffee Pancakes

These are both fluffy and chocolatey. No better combination! I’ve included both vegan and non-vegan ingredients so we can all enjoy.

Creamy Butternut Squash and Thyme Pasta

This autumnal pasta dish is creamy, comforting, and packed with plants and fibre for a satiating lunch or dinner. If you want to increase the amount of protein, just add in some chicken, salmon or some tofu. Enjoy!

Chickpea, Carrot and Greens Soup

This is a deliciously warming and filling soup. The chickpeas give you a hearty dose of protein and the greens give you the goodness your body knows and loves. I personally like my soups quite thick and chunky, but if you like yours smooth and a little thinner, feel free to blend more and/or add more water.

This is a healthy but refreshing beverage. I like to add sparkling water, but it would also work with soda water, lemonade and maybe even prosecco!

Carrot Cake

Carrot cake is a great example of how we have adapted the way we cook, as carrots were used to sweeten baking when sugars and sweeteners were sparse or too expensive. So here we are. My version of carrot cake. It’s a little healthier but still delicious!

Chocolate Chickpea Cake

This is a super chocolaty cake, with the chickpeas adding to the texture and gooeyness. I like to make this cake as a means of sneaking a little more goodness into my dad and brother without them really knowing.

Maple Pecan Banana Bread

I never used to like banana bread (or bananas, for that matter) but now I can’t imagine life without either of them. I hope you find yourself in a similar position after you make this banana bread. This is great as an accompaniment to a hot beverage or, because it’s refined sugar free, as breakfast (also with a hot beverage).

Brownies

After many trial batches, I think I have finally created a recipe for the perfect brownie. These are also slightly healthier as they don’t contain butter, and use coconut sugar and dark chocolate for the perfect flavour.

Breakfast Greens Smoothie

This is a really good option for an on-the-go breakfast. It’s full of nutrients and is well balanced between carbs, protein and fat so it should give you energy and keep you full for a while. It also doesn’t taste of kale or spinach so you won’t feel like you’re drinking grass!
