Chickpea, Carrot and Greens Soup

This is a deliciously warming and filling soup. The chickpeas give you a hearty dose of protein and the greens give you the goodness your body knows and loves. I personally like my soups quite thick and chunky, but if you like yours smooth and a little thinner, feel free to blend more and/or add more water.

Serves: about 4 serving

Time: 30-35 minutes

Ingredients

½ onion

2 cloves of garlic

3 teaspoons ground cumin

2 teaspoon ground coriander

½ teaspoon ground turmeric

2 medium sized carrots (plus a little extra if you, like me, have a dog who loves carrots and begs to be fed some)

2 cans of chickpeas (I like to use a normal can and the chana as they are chickpeas but have skin on, so have a little more flavour and texture)

750ml stock (vegetable or chicken are good)

80g watercress (optional but great if you can find some!)

Generous handfuls of spinach and kale

Salt and pepper to taste

 

Method

1.    Roughly chop the onion and add to a hot pan with some oil. Cook for a few minutes until the onions start to sweat. Roughly chop the garlic and add to the pan, along with the spices. Cook for another few minutes, stirring frequently. If the spices start to stick, either add more oil or a splash of water.

2.    Roughly chop the carrots and add to the pan. Stir so that the carrots are well combined and allow to cook on a low heat for another five minutes or so. Add the chickpeas and stir to incorporate the spices.

3.    Add the broth and turn the heat down low. Put the lid on the soup and allow it to simmer away. Try not to boil the soup, so keep an eye on it and stir occasionally. 

4.    After about 20 minutes, add the watercress (if using), spinach and kale. I like to roughly chop the watercress before adding it as sometimes the watercress gets wrapped around the blade at the blending stage.

5.    Once everything is added and stirred through, it’s time to blend. Feel free to use whatever you have to do this. I like to use an immersion blender as I like my soup a little chunky. 

6.    Once you have the soup at the desired consistency, taste to see if it needs any more salt/pepper. If it’s not thin enough you can also always add some more hot water.

7.    Serve with some lovely crusty bread!
