Pesto Pasta

Another super easy recipe. It is full of flavour, nutrients and you can add any extras you want. I sometimes add sugar snap peas, roasted courgette, broccoli and kale. Chicken or prawns would also go great and a sprinkle of Parmesan would work perfectly! Use this as the base recipe and let your culinary creativity take over!

Time: 10 minutes

Ingredients

200g any pasta (I used pea pasta)

About 100ml of reserved pasta water

100g of peas

2 tablespoons of green pesto (I used the almond pesto from Deliciously Ella’s website that I made previously)

2 big handfuls of spinach

Sun-dried tomatoes and artichoke hearts (as many as you like!)

Juice of one small lemon

Method

  1. Cook pasta and peas according to instructions. Strain, reserving about 100ml of the water.

  2. Add the liquid, pesto and spinach straight to the pasta and peas. Stir through until well combined and the spinach has wilted.

  3. Add in sun-dried tomatoes and artichoke hearts and squeeze over the lemon juice.

  4. Salt and pepper to taste.
