The Ultimate Smashed Avo

‘Can I add a side of smashed avocado?’ The cry of everyone who orders brunch at a restaurant. I am indeed one of those people and have therefore undertaken many experiments over the years, trying to perfect my version. I think I have finally done it and would like to share it. Enjoy with brunch or as a side to any meal. I love it on seedy toast as a snack!

 

Serves: 2-3 portions

Time: Less than 5 minutes

 

Ingredients

2 ripe avocados

2 tablespoons olive oil

Juice of ½ lemon

Generous amount of salt

Pepper to taste

 

Method

1.       Mash the avocados in a bowl to the desired consistency (I like mine a little lumpy).

2.       Stir in all the other ingredients and enjoy!
