Sounds weird but these are super yum. You get some greens first thing in the morning, as well as a good fix of chocolate.
Makes 10-12 pancakes
Ingredients
Roughly 125g grated courgette (zucchini)
100g ground almonds
100g buckwheat/plain flour
1 teaspoon baking powder
2 tablespoons cacao powder
55g coconut sugar
300ml milk
2 eggs
2 tablespoons nut butter
Method
1. Place the grated courgette in a tea towel/kitchen paper and squeeze as much of the water out as you can. Leave aside while you prepare everything else.
2. Combine the ground almonds, flour, baking powder, cacao powder and sugar in a mixing bowl. Stir to remove lumps.
3. Separately whisk together the milk, eggs and nut butter.
4. Pour the wet ingredients into the dry and stir through. Give the grated courgette one more squeeze before stirring through the batter.
5. Melt some butter or oil in a pan. Take about half a ladle of batter per pancake and cook for a few minutes on each side until brown.
6. Serve with fruit, maple syrup, yoghurt or whatever else you like with pancakes!
